peper en zout


Koken in water is zonde, dat gaat ten koste van de smaak. Gewoon een paar uurtjes in aluminiumfolie op een smeulend vuurtje van je zelf gehakte hout laten stoven. Of vooruit, vooralsnog in de oven.

Doe de bietjes in een gietijzeren pan in een op 150 graden voorverwarmde oven. Controleer met een vork of ze na zo'n twee uur gaar zijn. Als ze afgekoeld zijn, schil er af, in kleine blokjes snijden, een paar flinke scheuten olijfolie, twee eetlepels balsamico-azijn, gesnipperde bieslook, peper en zout erdoor roeren. Uurtje laten staan en een fantastische salade die niemand je afpakt.
